Mutton Majboos


Ingredients
Basmathi Rice: 2 cups
Mutton: 750gms
Onion: 1 big
Tomato: 3
Black Pepper whole: 1 tbsp
Black Pepper Powder: ¾ tsp
Garam Masala: 1tbsp
Arabic Spice Mix: ¼ tsp (optional)
Cardamom: 4
Cinnamon 1” piece: 3
Cloves: 4
Bay Leaves: 2 pieces
Dried Lemon: 1
Parsley: 4 strings (optional)
Salt: Needed
Ghee/oil: 2tbsp

Method of Preparation

Wash and Soak Rice for at least 15 minutes.
In a pot; add little oil/ghee and sauté onion for 2 minutes. Then add tomato and stir for a while.
Add black pepper powder, garam masala and salt.
Add mutton pieces and enough water. (We should get 3 ¾ cups of stock after the mutton gets cooked). Adjust the flame accordingly.
Cook the mutton pieces in low flame. When it is cooked take the mutton pieces out of the stock. Fry or grill the mutton pieces.
Add cardamom, cloves, bay leaves, pepper, dried lemon, Arabic spice mix and soaked rice to the stock.
Cook in low flame till the rice gets cooked. When rice is cooked add chopped parsley.
Serve by arranging the mutton pieces on top of the rice together with grilled or fried vegetables.
